I posted an image of this serving, mixed greens on Instagram the other week and had a few friends comments on how yummy it looked. But at the same time, it’s overly sound and incredibly simple to make. So…since it doesn’t appear to be reasonable for post a yummy nourishment picture without including a formula here it goes:

Ingredients

  • 1 can white beans

  • 1 avocado, chopped

  • 1 Roma tomato, chopped

  • 1/4 Sweet onion chopped (or less or none if you’re not a fan of onions)

  • That’s the salad base and here’s the vinaigrette
  • 1 1/2 tablespoons olive oil

  • 1/4 cup lemon juice

  • dried basil to taste

  • garlic powder to taste

  • salt & pepper to taste

  • 1 teaspoon mustard

Directions

  • Whisk vinaigrette ingredients together then pour over salad base and mix well.
  • Refrigerate for a few hours before serving.
  • Viola! Yummy vegan veggie deliciousness.
